Sunshine Salad with Lemon Sesame Dressing (Recipe)

The dressing with this recipe can be used on any salad, and I actually make it quite often to use on whatever types of salad I happen to have in the house at the time.

For the Salad:
3 Zucchini
1/2 of a Broccoli
1/2 of a Cauliflower
1/2 to 1 pint cherry or grape tomatoes

For the Dressing:

3/4 cup orange, juiced
1-2 limes, juiced
2-3 Tbsp. Raw Honey or Raw Blue Agave
3 Tbsp. Sesame seeds, soaked 2 hours
Hemp Oil or Extra Virgin, Cold Pressed Olive Oil

Directions:

  1. Using a spiralizer, slice the zucchini into large spaghetti spirals.
  2. Place zucchini spigot on a plate.
  3. Place the broccoli & cauliflower in a food processor & pulse until finely chopped (1/4-1/2 inch pieces).
  4. Put the broccoli-cauliflower mixture on top of the zucchini spaghetti.
  5. Quarter or halve the tomatoes, depending if they are cherry or grape tomatoes.
  6. Place tomatoes on top of the broccoli-cauliflower mixture.
  7. Take the lime juice, orange juice, raw honey oil, sesame seads (and any other herbs you like – see note below) and either place in blender for a few seconds, or whisk in a bowl until well blended.

Note: If I am using a blender, I sometimes like to add fresh basil, oregano, rosemary and sage for more flavor. Be careful not to use too much, as it can overpower the dressing.
