Angel Hair Pasta with Tomato-Basil Marinara (Recipe)

I absolutely love this recipe! I can honestly say that this is one of the best “spaghetti’s” I’ve ever had, and the fact that it’s raw and healthy is just a bonus in the summer time. This can be used as a main course or a “salad alternative” without even turning on the stove!

Angel Hair Pasta with Tomato-Basil Marinara

For the Angel Hair Pasta: 3-4 Zucchini

For the Marinara Sauce:

  • 2 1/2 Cups Tomatoes
  • 12 Sun-dried Tomatoes, soaked at least 1 hour
  • 3 Dates, pitted & soaked at least 1 hour
  • l/4 Cup Extra Virgin Olive Oil
  • 4 Cloves Garlic
  • 1/4 cup extra-virgin, cold-pressed olive oil
  • 1/2 to 1 Cup Loosely-Packed Fresh Basil
  • 1 tsp. Celtic Sea Salt
  • 1/8 tsp. Cayenne
  1. Using a spiralizer, slice the zucchini into large spaghetti spirals. Place zucchini spirals on a plate.
  2. Place all the Mannara ingredients in a food processor & process until smooth.
  3. Pour sauce on top of noodles.

There are 2 types that I can recommend: 1) The Joyce Chen Saladacco Spiral Sheer, which has a retail price of$34.00, but I sell it for $25.00. You can also get this through Amazon.com. 2) This spiral sheer is made in Germany, the LURCH Spiralo Spiral Cutter, which retails for $41.99, but I can sell for $40.00. I don’t know where you can find these online, orin stores. But I recommend these 2 because they are top loading, soyou use downward pressure. The others (of which I have 2) force you to use sideways pressure, which is harder to use. There are others on the market, but that do both angel hair and thicker spaghetti, but they use sideways pressure. I don’t personally like that because the machine is constantly trying to slide in the direction you push.
